SOFTNECK GARLIC VS. HARDNECK GARLIC

Softneck garlic: has a milder flavor and is usually what you see in the grocery stores. Softneck grows better in warmer climates than Hardneck. When you see beautiful braided garlic… well that’s using Softneck Garlic, since it’s stem (neck) is soft and flexible. Softnecks also have more cloves ranging from 7 to 20!  The bulbs are usually quite large. They are also used to make garlic powder more often. Hardneck garlic: tends to have a more complex flavor and spicier more ‘garlicky’ taste. Hardnecks don’t store as long as softnecks … 4 months is the average length of storage. Hardnecks thrive in cold climates which keep them from bolting! They also have scapes which are the lovely lavender toned flowers that grow in the spring. We snip them off so the energy is pushed into the bulbs. The scapes are excellent in cooking, sauteing and making scape pesto! Hardnecks have fewer, but larger cloves than softnecks.
